Black bean patties

Last week we ventured outside our normal dinners for a recipe that Janie found. Black Bean Patties with Corn Relish and Avocado Cream Sauce

It looked quite interesting, so a week before we picked up the appropriate groceries. Tim decided to take pictures during the prep and cooking, so here we go…

First, the cooking involved blending a bean, red pepper, egg and other stuff combination.

Ready to blendThe recipe called for a chipotle chile in adobe sauce which we didn’t have…but we did have an OLD dried chipotle chile, which we revived as best we could in boiling water.

Reviving a dried chileThis chile was chopped and added to the blender. Next some smushed beans and other stuff was mixed.

Mixing ingredientsThe blended bean combo was added, or poured, into the mixture.

Pouring in the bean blendAnd then stirred and chilled.

Chilling the bean blendMeanwhile, corn for the corn salsa was warmed up.

Prepping corn for the salsaThen mixed with other stuff to make the corn salsa.

Finished corn salsaWe were also going to make the avocado sauce. Unfortunately we found out the hard way about the short shelf life of avocados. Lots of not-so-ripe parts on the inside of this one, so we scrapped plans for the sauce.
