We had an enjoyable dinner tonight. Janie found an interesting recipe online several weeks ago that we finally tried: Herbed chicken risotto with carmelized onion. It was time consuming with both carmelizing onion and making risotto (along with simmering then shredding several chicken breasts). And, it ended up being very good. The recipe also called for a cup of wine. So, we opened a bottle and had to finish it while cooking. And, that led to popping open one of the Captain Morgan bottles Janie received at a wedding shower so that Janie could mix it with ginger ale and ice cubes for the two of us. It was a nice ending to the weekend. 🙂
