Sausage, pepper & cornbread skillet pie

We finally got around to using a very nice cast-iron skillet that Janie received as a wedding shower gift. Recently Tim’s Mom came across some skillet recipies in a magazine of hers and mailed them to us. We decided to try the sausage, pepper & cornbread skillet pie for our first use of the skillet. There was a lot of prep time, chopping up 2 red peppers, an onion and tearing up a bunch of swiss chard (large!). After cooking most of the ingredients in the skillet on the stove top, cornbread batter was spread over the middle and everything was put in the oven for a while. When it came out, it looked pretty good.

Skillet fresh out of the ovenWe enjoyed the meal, each having seconds. The chard had an interesting taste, surviving the cooking well, and the cornbread went well with the other ingredients. It was a fun, tasty first use of our skillet! 🙂
