Potato Cakes

We had fun making dinner tonight. It took over 1.5 hours to make potato cakes, from a Mexican cookbook of Tim’s. Potatoes, cheese, egg, salt, jalapenos, cilantro, form up with flour and shallow fry in (canola) oil. Tim did the forming and Janie aced the frying. Janie liked them au natural while Tim enjoyed salsa on top. They were good!
